There are different ways of making one’s egg, you can make then sunny side up, you can scramble them, poach them, boil them… or make them into an omelette (which happens to be my personal favourite). Making an omelette is very easy and you can enjoy it with yams and potatoes (boiled and fried), bread, and an array of other awesome dishes.

 

INGREDIENTS
3 raw eggs
1/2 cup green pepper, chopped
1 tsp chilli pepper, chopped
1 tbsp onions, chopped
1 tsp yellow pepper, chopped
1 Tomato, chopped
1 tbsp of butter or oil
Salt to taste

DIRECTIONS

Break the eggs into a plate
Add the salt to the egg and beat till it is light
Pour the oil into the pan and place over low heat
Fry the vegetables for about 2minutes, scoop out and set aside
Pour the egg into the pan and let it fry till it starts becoming firm
Sprinkle the vegetables over the egg and allow it cook for about 2minutes
Fry till you achieve your desired colour
Fold the egg like you are making a sandwich out of the vegetable sandwich
Serve as desired
